I made this over the weekend to use up some CSA squash and potatoes -
it was delicious!!

My changes:
-Since I had the mandolin out already, I sliced thinly the onions
rather than chop them
-I didn't notice the 1/4" suggestion and cut mine thinner and it came
out just fine
-Discovered I was out a Parmesan when I sent to grate some so I used a
pre-grated Italian cheese blend I had instead - again turned out just
fine!
The onions and garlic break down and absorb the flavors of the potato
and squash making it taste like there is at least a cup of cream in
the dish when really it is quite health! Worth the time especially if
you have a mandolin to make quick work of the slicing!
