As noted in my previous email, I eat a mostly raw food diet (about 75%), about 1/2 of which is in the form of green smoothies. Today's recipe was inspired by some rhubarb my friend dropped off. I don't really like pie or compote, and neither do my kids, so I thought I'd see if I could eat the rhubarb raw.
Gathering some ideas from various sources, including a recipe from
www.goneraw.com, I made (what else?):
a strawberry-rhubarb (raw) green smoothie!
1 large stalk rhubarb (raw)
1.5 cups strawberries (I cut the tops off mine and froze them to make better smoothies)
1 small banana (frozen, if possible)
1/3 cup raw cashews
2.5 cups raw spinach
pinch of cinnamon
2 tsp local honey (or to taste)
a quick squeeze of lime
put in the blender in the order listed above (I use a vitamix - I don't know if a regular blender could actually handle the raw rhubarb well, although most can handle regular green smoothies). Fill blender with enough water (I add a little coconut water too, for electrolytes) to cover about 3/4 of the ingredients inside. If your berries are fresh, then use less liquid and add some ice cubes, as it's best really frosty cold. Blend blend blend until smooth. Makes 2 quarts of smoothie.
