I've been swimming in lettuce lately, and I can only eat so much
salad, so I came across this recipe for Lettuce Soup in my Gourmet
cookbook - http://www.epicurious.com/recipes/food/views/Lettuce-Soup-231995
I probably put more onions and potato than called for in the recipe,
but its quite good. Tastes more like potato soup than lettuce, but
eaten chilled, its a great use of extra greens.
