Hi all --

Here's how I'm using this week's box, as I'm adjusting to sharing a box this year.

I highly recommend you try this zucchini-based guacamole recipe. It's great!

Cheers,
Heather

Thanks Heather!  We just got 4 big zucchinis and we have about 6 big squash in out fridge still from last week. I was looking for something to do other than roasting them with olive oil and this looks perfect!

Have you ever tried adding cilantro instead of basil and also maybe half an avocado for the extra creaminess?

Thanks, Ian. I bet cilantro would be perfect in the zuke-a-mole -- but I happen to hate the stuff. I wish I liked it, though. And you could certainly add avocado, too. I didn't have any around, so I went with a scoop of sour cream -- but it's quite good on its own.

Cheers,
Heather
