A conductive touch probe could be used to test continuity of traces on
circuit boards made.
I seen 2 example touch probes in emc2 wiki that test if the probe
touches something but you can see how this might be able to be done if
it could detect the thickness of the copper.

Yeah, I've seen several DIY probes made by Reprap builders. This one
