I've tried booting off of the cdrom w/ the -s option but I can't access the
HD's copy of /etc/vfstab to make corrections. Any suggestions?

You need to post which OS you're running... There are ways of
booting from installation material, and then mounting the root
disk, but they're slightly different from platform to platform.
Please give us Hardware, OS, and release, and someone will probably
be able to help you. Had to do this the other day with solaris x86

Why not?
/etc is normally part of the / filesystem, and that is often on
/dev/dsk/c0t0d0s0 or c0t3d0s0 - you might have to hunt around with format to
find it, then
fsck /dev/rdsk/c0t0d0s0
mount /dev/dsk/c0t0d0s /mnt (or /a)
cd /mnt/etc
vi vfstab
what isn't working?
