I thought I had all the correct .fd, .tfm files, but I assume not (or that
they're in the wrong place). The latex companion doesn't seem to be much
help on this, so could anyone tell me what file would have the definition
which seems to be missing?

Actually, the structure of fonts/ams is determined (in some sense) by
the structure of e-math.ams.org's directories; since we mirror the
CTAN copies from them, there are constraints on how we can organise
our stuff.
The fact that latex/packages/amslatex doesn't show up in the site
index command derives from its being a link to fonts/ams/amslatex
It's such a joy running an archive...

You need the file Umsa.fd .
You can find this at the CTANs in (approximately)
/tex-archive/fonts/ams/amsfonts/latex .
It's a pity They hid these AMS files away there --
surely they should be in .../latex/packages/amslatex ?

You need Umsb.fd and Umsa.fd which, as I recall, should be created
when you unpack the amsfonts package.
