I'd like now to change the background of the revised parts, and I've
found the "soul" packages with the \hl command.
Since I am not so a TeX/LaTeX guru, I couldn't figure how to use the
\hl command with my new commands above. As a fact, \hl seems to be
different from \color: it doesn't fit in an environment.
Can anyone help me, or suggest another way of highlighting?

I use latexdiff ( http://www.ctan.org/tex-archive/support/latexdiff/ ) to
highlight changes between documents.
unfortunately, it chokes on the typical document I feed it..... (in
the sense that the resulting latex file does not compile)
Sometimes it gives errors to me too but I just keep progressing and I end
up with a fairly usable pdf file.
It is not exactly what you were looking for but I also use:
