Now, of course, somebody might ask me why I care about aesthetic value when
double-spacing already destroys most of it. This is a valid criticism, but
alas in philosophy it appears that double-spaced typescript is standard,
ugly as it may look.

People generally suggest that you \usepackage{setspace} .
I'm not sure what you mean by AMS-LaTeX,
but setspace.sty seems to be compatible with amsmath.sty .

I use the package setspace with miktex that can be found in CTAN (the
file to be download is setspace.sty).
To have doublespacing set in the preambule \doublespace and it can be
changed in the document, for exemple to have single spacing by:
\begin{singlespace}
\end{singlespace}
If your version of latex is older you may need the package setoldsp.
