Mac ethernet questions

Question... Is it possible to run multiple networking protocols through
multiple ethernet cards in one Macintosh? I know this is possible with
Apple's Network Router software, and assume that it can be done in a standard
desktop Mac, but can someone confirm?

Also, does anyone know of a software package which will graphically report on
the utilization of the Ethernet port on a Mac? Specifically, so that
comparisons can be made between fast and slow network response times.
