My mother has a snowball iMac that we gave her several years ago. This
year for XMas, we are giving her a new iMac. I plan on buying it ahead
of time and loading up all her favorite apps.

My question -- can I do that install first, then take it to her house,
have it opened XMas eve, and then run the upgrade assistant to move over
her internet and email settings? (or does that have to be run first?)

I've not done this, but I'd imagine that so long as you install any
apps for all users, not just for her user, then you could do this.
http://www.theconsultant.net/archives/2005/10/03/macintouch-updating-then-resetting-a-mac-for-an-out-of-the-box-experience/
has a nice article on how to get the shiny new out-of-box experience
(first user setup, leopard intro video, auto start of migration
assistant etc) to launch after an update of the client Mac, which is
pretty good.
I'd test it first, obviously, but it should make for a nice,
thoughtful Xmas present.

Thanks. I was hoping so. :-)
