GarageBand - How do I change the height of tracks on the screen?

How do I change the height of tracks on the screen so I can either see more of them at once or expand one to examine it more closely? I see how to do it with the display of measures or time, but how do you make that adjustment in the other direction with tracks?

OKay, I see part of the problem. I'm creating audio tracks and they are automatically being created with a left and right channel instead of a single chancel and a panning control. How do I control this?

One other thing to add. I seem to have the problem only if I start with a "New, empty project." If I start with one of the other templates, that tracks are all normal and any new track I create is also normal. The only mystery this leaves is why did this just start happening. The answer I'm betting on is that some kind of update got installed behind the scenes.
