Audiobooks
For pdfs/epubs in iCloud, I can't identify a specific path, but this is one
way to open in Finder:
1. Open any pdf in Apple Books (add any and open it if you don't have one in
your library already).
2. In the resulting Preview window, right click the file name and, under the
file name, click "Books --- iCloud."
This should open a Finder directory with all of your uploaded epubs/pdfs.
I'm not sure if this will show books purchased through Apple Books, though.
