iTunes doesn't store artwork on an iPod unless the artwork is going to
be displayed on it. However it should still be visible in iTunes, and
would be re-transferred to the iPod if you changed the setting back at
some point.

I thank you dorayme, but I'm nearly deaf, and all the newfangled sound
delivery systems fail on me. I won't wear a hearing aid though. A
hearing aid would only add to my aged look.
I listen to talk radio really loud. My friends don't come over anymore.
I can hear a Canada goose honking a mile away but can't hear my wife
from five feet. Something about high tones. Alas.

It's gone from the iPod but should still be in iTunes on your computer.
Re-enable the option and it will get loaded back to the iPod.
