If you haven't already done so, fly some of the 'Historical Missions.'
These are really just training missions that will pit you first
against unmoving-unarmed TIE's, and gradually moves you up to a
'blindingly fast' attacking target.

If you're having trouble, try using the full-screen mode (hit '.')
It helped me out a lot.

You will learn their methods so that you can track them fairly well -
I know that I can pretty much guess where they're going to go.
However, once you DO lose them, then you have to use your targetting
radar - this is sort of a pain since I at least can't really keep my
attention on both "screens" at the same time. Once he's back on my
viewscreen, however, he's mine. Practice! Especially try the A-WING
historical missions - my A-Wing took out about 30 TIEs on one of them.
In addition, if you hit "." while you are fighting, you get a full
screen viewscreen - much easier to track things, but you can't keep
track of how your shields are doing.
I noticed that the Y-Wings have really severe tunnel vision - too much
cockpit!
