As for you question about train settings...
Local trains make stops to load and unload at every station in their route
(whether you tell them to or not).
Through trains will pass up all Depots in their route (unless you tell them
to)
Express trains pass up Stations and Depots (unless you tell them to)
Limited trains make ONLY those stops you identify.

From memory, setting the train type regulates which size town the train
will set down & pick up from.
This is a great game. I should revisit it.
There is an excellent book called 'The Official Guide to Railroad Tycoon'
by Russell Sipe (ISBN 0-87455-244-3) which begins where the manual leaves
off. I found it very helpful - don't know if it is still available,

The manual explains that
** a "limited" train stops only at the locations (up to 4) named in the route,
** an "express" train stops at named locations and also any terminals
along the route,
** a "through" train stops at named locations, any terminals, and also any
stations, and
** a "local" train stops at named locations, any terminals, any stations,
and also any depots.
If a train is supposed to stop at a location, but there is nothing to pick
up or drop off, it blows the whistle and keeps going. This is an
"attention" signal since the train has been ordered to do something
"useless" and you may wish to check it out.
