I understand the problems (such as that its a different characters bar) but
I thought Id ask anyway.

It might, at least in the code. Unfortunately when you possess the animal
you get an entirely new bar which is the animals bar. This would be OK
since I could quickly add the unpossess button before going exploring
except that unpossess doesnt seem to appear as one of the creatures
options. To reach it you have to rightclick your old body.
Personally I think this is just an overlooked bug thing in the game. It
might get fixed. Or maybe some scripter will find the exact reference for
the unpossess skill so that it can be added to the game somehow.

Same way you would with any other action. But you have to do it every
time you summon and possess a familiar.

What do you mean? There's only one way to put an action on the quickbar
that I've found: right-clicking over the slot and selecting the action
you want in there. Is there any other way to put anything on the
quickbar (besides dragging and dropping items from the inventory onto
the bar)?

Perhaps we're misunderstanding each other. What people want, I think,
is a way to put unpossess on the quickbar such that it's always there
and they can just hit a key to do it. If you have to do it every time
you possess a familiar, the purpose is defeated; you might just as
well right-click on the familiar and and do it, would be a lot faster.

Sort of. The guy who started the thread said he understood something
about the mechanics of familiar quick menus: they regenerate everytime
you resummon the familiar, so he said he would not mind dumping the
unsummon onto the bar everytime he repossessed.
The reason why you want to put it onto the quickbar is because you
probably want to unpossess quickly in case you see the cavalry coming to
squash the PC. Pixies are small and clicking on them sucks (as you
probably found out in the second chapter). Also, if you're good at
keeping your familiar alive (not likely, I know) you only have to do
this once per summon, so you might actually use the hotkey more than
once.
