I've tried using it during network games, and haven't seen anything
happen.

It's a throwaway move. You can't land it.
Probably inspired by a rider (Brian Deegan) that jumped off his bike
and launched it over the finish line jump when he won his first 125
moto. The AMA didn't like it, saying he endangered the corner workers
and other riders.
There was even talk of revoking his moto win, but that didn't happen.
Enjoy it in MXM, because I don't think you'll be seeing any more real
life Kahuna Dumpster type moves. =8^P

Try taunting when your in the air next to someone. You can kick him off his bike in mid air.
If He's behind you , you'll look backwards and point (taunt) at him.
It's all in the manual folks.

That's the point of the Kahuna Dumpster. You only ever do it when going
past the finishing line, for style.
