I just got a SainSmart and want to "attempt" to make a connection it to a Teknika MA-RGB7 and the ][gs.
The MA-RGB7 documentation seems to have no Pin Out information, but the AppleColor RGB Card and the Digital Prism Card from Applied Engineering seem to be Identical to each other, so I would guess that the MA-RGB7 would be wired very similarly...
The SainSmart card I got came with a Pig-Tail Harness for P11 ( R, G, B, S, HS, VS, GND ) and P9 ( +5-12VDC, GND ). The Pig-Tail Harness for P11 has no Horizontal Sync ( HS ) wire, just the Vertical Sync ( VS ) and a wire for the Shield ( S )...
Now, about your ][gs and the JAMMA...

I "believe" that ALL the Outputs are 0-5 VDC ( TTL ), so if you get the Wrong Video Sync, try the other one.. If Tying ALL the Grounds together seems to cause Interference, you might try using only One, possibly the Red or the Green..
I wouldn't connect the JAMMA Ground to the NTSC/Composite Output... I would think that Shorting the Output would not be a Wise Thing to Do.. Possibly the ][gs Uses that to tell it to provide NO Composite and Only Output RGB.... I guess I will find out shortly....
