Log[Exp[x]] // PowerExpand
Simplify[Log[Exp[x]], Element[x, Reals]]
FullSimplify[Log[Exp[x]], Element[x, Reals]]

One way is to wrap Log[Exp[x]] with PowerExpand.
In[68]:=PowerExpand[Log[Exp[x]]]
Out[68]=x
