So as you are noticing the Black-Scholes option pricer is compute-bound with few memory accesses, so Nvidia V100 GPU gives a 4.1x speedup over the Skylake, so then if you grow more the number of memory accesses so it can lower to 3x speedup etc. so then i think that the Skylake System is also powerful.
