I have an Epson 750. It gradually ran out of red ink during a long,
multi-page printout.

How is the ink level monitored? My software monitor shows that the color
cartridge is still half full.

Did it run out, or did it clog? BTW, I think you mean magenta, these
printer don't use
red.

Although clogging is a possibility, I would more expect it to clog from
drying between uses.

In this case, over several pages, I gradually lost scan lines of that color,
until the color was completely gone.

Should I try swabbing the print head? Or just press the "Waste ink"
button?

True. I was printing red (magenta+yellow). Over two or three pages is
shifted from red to yellow.

Don't know about Epson but Lexmark actually keeps a dot count and then
calculates and displays the levels from there. My driver used to crash a lot
so I'm sure my indicated levels are off quite a bit too. (the driver would
crash but printing wasn't disabled)

It could still be clogging, or even a buildup of surplus ink over the
magenta nozzles preventing the jets from hitting the paper. I have had
this before with a couple of Canaon printers.
Have you tried a head cleaning routine?
