- recurse directories.
- include hidden files.
For some reason I don't know how to put the pkzip command options in the
right order. If someone could help me, it would be greatly appreciated.

Span? I have never heard that the DOS version finally could do it, too.
Perhaps you have to use Arj, which does what you are asking for.

Huh? It's been able to do it for the longest time, possibly even before
2.04g, I don't remember.

I use Pkzip a lot to span disks, but I've never used the hidden file option. The
command line you are looking for would be:
pkzip -r -p -&w -wh a:filename *.*
-r -p is to recurse directories and to store the paths into the zip file
-&w will span disks and erase any files on the destination disk
-wh is to include hidden files
