How to "Downgrade" from Win2K Server to Win2K Pro (how to uninstall Win2K)

I am trying to re-configure a former web server for use as a scanning
workstation, and HP won't support its scanning hardware or software for
use on Windows 2000 Server. So I need to "downgrade" from Win2K server
to Win2K professional.

Problem is, there appears to be no way to uninstall Windows 2000 Server.
Microsoft's only suggestion is to create an MS-DOS 6 floppy disk and
boot from that so I can reformat the hard drive. But I don't have
MS-DOS 6 and of course Microsoft doesn't sell it, so this is not an
option.
