I use VLC and Video Player.
I like ES File Explorer but I hate the ES Media Player that came
with ES File Explorer.
I dont want ES Media Player constantly showing up as an option
when I play video.

How do I delete es media player?

If I understand your problem/question correctly, you probably need
this:

"How to set and clear default applications in Android"

Then select another player and tell Android to use it *always* and not
to ask again.

If it's not a separate App beside ES File Explorer then you can not
delete it at all.

I also have ES File Explorer where the ES Video Player is an obnoxious
extra addition that shows up.

I would also like to delete it because I use two different video
players so I have my MP4 files come up and ask but I have to scroll
when the phone is in landscape view because of the stupid EXTRA
USELESS rogue video player that comes with ES File Explorer.

If ES File Explorer was not so good I would just delete ES File
Explorer to get rid of the rogue ES Video Player!

Is there a MIME.TYPES style form to have JUST THE TWO or THREE PROGRAMS
YOU WANT to show up as your selection when you try to open an MP4 file?

Android should have that feature some where.

No. As long as you don't tell Android to use a selected app ALWAYS, it
will continue to ask which app you want you use. But you can not limit
the list which apps are shown for the selection dialog - since every app
can register itself as a handler for certain file types.

I've been reluctant to choose the 'always' box -- does that mean
"always" for only THIS file or "always" for ALL files of this type?

For all files of the same type, but you can undo the "always" selection
from settings/apps/[specific app]/clear defaults.

Grrr. That would work OK for plain text files, but different pdf files
are happier with different pdf readers. Thanks anyway :-(

Well, if you hesitate to have few items to watch the video,
than you have not probably tried sharing feature yet.... :-)

I guess such an unwanted registration of application
for particular action could be undone on rooted phones only.

Is there a master mime types registration database?
Where is it?

It would be nice to be able to edit that manually, so that
only the selections you want to show up do show up.

I am not sure, if it is directly related to MIME,
even if it addresses similar things.

No - it's a bit more complicate than just a simple mime type list with
associated apps. Android uses "intents":
