After reading the various help screens that seem to apply, I'm still not
sure what I want is possible.

Can one when on the message list do a wholesale delete or save etc. based
on the subject of a thread? For example if there are 10 messages
sprinkeled in the list about horses, can some action be applied to that
thread alone? That is of course without doing it to each message but to
all at the same time.

If you collapse a thread (with the "/" command on the first message of it), then pressing "S" on that message will ask you to save all messages in that thread, it is similar for other commands.
