Mail doesn't offer a great spell checking system, it doesn't seem
possible to teach the system new words and auto correct functions seem
to be years behind the Microsoft Outlook system....are there any
adjustments I can make to make things easier?

I don't use Mac Mail.app (this is a Eudora newsgroup) so I really don't
know, but you might check under the Services... menu item. Another
possibility would be to buy TypeIt4Me and use it's autocorrecting
feature.
