Also How do you declare a memo field in the Interbase database
supplied with Delphi ? I have tried using Varchar, but once it is in
edit mode the field is displayed as a blob memo and no text can be
entered.

If you are using a TMemo component, the command would be:
MemoName.Lines.Clear;
If you are using a TDBMemo component, use:
TableName.FieldByName('FldName').Clear;
This will clear the underlying field value.

A VarChar field should do quit fine for this purpose. Just where is it
that the VarChar field is displayed only as "memo"? In a TDBGrid? If that
is the case, then this is expected behavior. Memo data cannot be displayed
in a TDBGrid (or in the Database Desktop). You would need to use a TDBMemo
component to display the memo data (best way) or migrate the data to a
TMemo component.
