What I want to do is:
designing an application that changes its look and feel depending on available input devices.
For example: if a touch screen is available a touch screen specific look and feel is created (the size of buttons is different, etc.) The user interface chages a little bit when a mouse input device is present. (The user interface is that way you know ...)
Who has got a good idea of designing this application in Java?

This is exactly what Swing is intended to support - check
out the Swing demos like SwingSet (with its toggling
between the standard Look and Feel suites) and Metalworks
(which tweaks the Java L&F).
