What file extensions can COBOL source files have ?

I only know *.cob.

Look in the manual of MF-Cobol, there are more extensions
and there is possible to change your own extension to allowed extensions.

Anything is permissable. I have used .CBL, and .CPY (for Copybooks),
as well as .COB.

Anything is permissible depending on standards in use at your location.
Some of those that I have run into include the following:

.COB (Program Source)
.CBL (Program Source)
.PCO (Recompilation Required Source Code)
.FD (File Descriptions)
.SEL (Select Statements)
.WS (Working Storage Copy books)
.CPY (Copybooks)
