Rendering for video

I'm wondering if there is an FAQ or tutorial out there on the different ways
to render for video. I've seen many different 'qualities' of animations.
Some have a film type look (Toy Story, Reboot) and I can't get mine to look
like that. If I render full fields it looks almost too real and kind of
cheesy.

If you've seen any of the Beyond the Minds Eye videos you'll know what I'm
talking about as they have many different qualities of renderings.
