You can use the greyscale slider, or RGB set to 128,128,128

RGB 50% gray is 127, 127, 127.
In CMYK, it depends: Do you want 50% gray int he black channel only, or do you
want a four-coor gray? If you're making drop shadows or something of that
nature, best to use 0, 0, 0, 50 for your C, M, Y, and K values.
