The problem is this. Although it is easy to shrink the canvas sized
image down so that it all fits on one letter size page, that defeats
the purpose of what I want to do. I'd like to be able to print the
actual size on mulitple sheets of 8.5 x 11 paper, line/arrange them in
the order they need to be to recreate the life size image and then
possibly tape them together. The net result would be a output on
multiple sheets to recreate the actual image size.
FYI, I can't afford an expensive printer that could handle a poster
sized piece of paper, otherwise I wouldn't be trying to use the
approach i suggest here.
I can't find anyway to do this.. Is it possible or do I need another
piece of software etc.

First check your printer software. Many Epson printers can do
this automatically if you click on "Poster" in the layout tab.
If that won't work, in Photoshop choose the Slice Select tool
(not the Slice tool), click anywhere in the image, then click
on "Divide Slice" in the options bar. The dialog box will let
you specify how big you want the slices to be, both vertically
and horizontally. You can save each slice as a separate file
using Save For Web.
Assembling the pages will be much easier if you use a printer
that supports borderless printing.
You'll need to print dimensionally accurate prints and do
precision paper trimming to make things line up.
