The manual states
The default size for postscript output is 10 inches x 7 inches. The
default for eps output is 5 x 3.5 inches. The size option changes this
to whatever the user requests. By default the X and Y sizes are taken
to be in inches, but other units are possibly (currently only cm)
How do I activate cm as a unit, please? Will be pt one days possible?
Furthermore, is there any chance for realising the following, please:
You have font size 12pt in your gnuplot.eps Than you would like to
include your gnuplot.eps into latex, where you chose as
width=0.85\linewidth. This will certainly decrease the size of the
gnuplot.eps. But is there a chance that the fontsize in gnuplot.eps
will not shrink when having chosen before the same font size as in
your latex document, please? O even adjust the font size in
gnuplot.eps according to the current font size in your latex document?

The only way is to use one of the LaTeX-based terminals (epslatex, tikz,
pstricks).
