I am using gnuplot with "set term enhanced post". I would like to have in
a label what in LaTeX would be ${\cal F}$. How can I do that?

Two ways:
1) use the 'pslatex' terminal driver, so you can write TeX in to you label
strings directly.
2) Find a PostScript font like the one used by LaTeX's \cal and use that.

Suppose your GNUplot label was ``F'' and you wanted it to be {\cal
F}. The following \psfrag call accomplishes that:
\begin{figure}
\psfrag{F}{ {\cal F}}
\includegraphics{plot.eps}
\caption{ ... }
\end{figure}
\psfrag is part of most LaTeX distributions and I use it a great
deal on my Linux system. An Internet search for psfrag will return
ample documentation plus the latest version.

The PostScript font ZapfChancery-MediumItalic seems to be a good choice and
is available for most systems.
Usage:
set label 'F' at 0.5,0.5 font 'ZapfChancery-MediumItalic,12'
