I don't have the appropriate document in front of me, but ...
If you are using gnuplot 3.5, get gnuplot 3.7 (via anonymous ftp from
ftp.gnuplot.vt.edu/pub/gnuplot or via the web from
www.geocities.com/SiliconValley/Foothills/6647).
Once 3.7 is installed, use the enhanced postscript syntax: "set terminal
postscript enhanced". Then you can use individual characters from the
"Symbol" font (as well as those in other fonts, of course). If, for
instance, the symbol for "Perpendicular" is #246 in the Symbol font, then to
use it as a subscript (as in your example) you'd write 'k_{/Symbol \246}'.
(Note the single-quotes: in double-quotes you'd have to double the
backslash.)
In the gnuplot 3.7 distribution package you'll find a file called
"ps_guide.ps" in the /docs/ps subdirectory. This file includes a chart of
the character codes (which is the document I don't have in front of me). It
shows you what is available -- with luck you'll find what you need.
