I have a big image I created using Gimp, and I'd like to print it. But
it's too big to fit on one 8.5x11 sheet of paper. I'd like Gimp to
split the image across many pages. Instead, it just prints one page,
which only captures the upper-left corner of the image. Is there any
way to make Gimp print the whole thing, split across many pages?

This splits your image into rows and columns and save these smaller images
to separate layers. That should work.
In the other OS, I used to use a program called LView Poster. It might
run under Wine ??
When I wrote my previous suggestion I had another program in mind but
could not remember if it was a Linux program or not.....Well, I did some
Googling and was happy to find that it is a Linux program. In fact, it is
included with most Linux distributions. It's called......would you
believe this.............'poster' ??? If it isn't installed already do
it now. Then, do 'man poster' in a terminal to see how to use it. I
usedthis program a couple of years ago to print out a large (4x6 ft.)
poster. It's nice in that it prints four brackets around the corners of
each page enabling you to precisely match each page. Give it a try !!
