There may be hope to enable "Kiosk Mode" (disable Home button and single app
use) on iPad after all:

We have not tested this solution, but this is certainly the best and cleanest lead
(doesn't require jailbreaking) we've ever seen.

Wow!  This is great.  Now if they would just allow turning off that backlight...

I have tested this and it sorts of works. It does disable the home button, so as soon as you launch an app it will be locked to it with no means to get back to the springboard (it disables the multitask bar as well).

Note that if the application doesn't support multitasking, when the device goes to sleep (either timeout or power button press) and then it's awakened, it will unlock to the springboard. Enabling Multitask in iViewer settings will unlock into the app.

I thought it would be a PITA not having quick access to settings (eg. to check wireless connectivity) until I found out you can access the iOS settings via URL Schema (with prefs://). Can I suggest adding a button that launches iViewer from its settings page? Should be as easy as being an URL Schema link, and it would be awesome in the Kiosk mode scenario

I don't think its possible to add custom buttons into the default settings app. But Florent will be able to provide more insight here.

Checked in my other apps and there's Nike+iPod that has a button launching the website in Safari, so it might be possible
