I love restaurants, of course. Some nights, though, I crave something in the grey area between dining out and staying in: a soft place to land for a thoughtful cocktail, a place to turn off the noise of the world and linger over something dark and dreamy.
Recently, I took to the streets of New York to find not just the best new bars, but the most interesting ones, those moving the needle on creativity and sustainability. I sought out ballsy mixologists and sommeliers shaking things up, whether they’re building a wine list of 88 bottles under 88 bucks, brewing botanical distillates in house, or crafting a cocktail list with equal parts alcoholic and NA that leaves zero waste.

Bespoke ice, locally made spirits, foraged garnishes, and artisanal infusions have become a given in cocktail culture. But this year is already proving to be an outstanding one for haute drinking. The latest crop of bars are doing all of the above and then some, putting an emphasis on zero waste, house-made distillates, offbeat wines, and immersive vibes. What's also clear is the geography of New York’s drinking culture, with a clear epicenter is Lower Manhattan.
