When it's time to invest in a chef's or bread knife, you do your research. Steak knives? Not usually so much. Certainly I put very little thought into picking up a set at a garage sale in North Hollywood, California, once upon a time. Steak knives are the sort of thing you get from your uncle for your wedding (Editor's Note: I did, in fact, get a set of steak knives from my uncle for my wedding!). Not the sort of thing you read up on like you would the other knives in your block. Wrong!

What we found, testing out a dozen different sets, is that a good steak knife is actually one you may use just as much as your chef’s knife.

Rest assured, the best steak knives aren’t just for steak. I don’t even wait for special occasions to whip mine out. I use my steak knives for everyday dinners, to slice through other proteins like chicken, sure, but also through whole roasted sweet potatoes, and meaty tomato salads in the summertime. And yes, when you’re lucky enough to be cooking a beautiful piece of ribeye, having a nice set of these knives in the drawer will let you complete that fancy tableau.
