In the new GUI builder, when selecting the "Picker" component (in "Additionnal Components") and then trying to change the "Picker Type" of this component (in "Advanced" properties), picking anything different from "STRINGS" has no effect. So selecting "DATE" to try to have a native date picker, for example, results in "STRINGS" remaining selected ...

I see the issue, can you please file a bug on this here: http://github.com/codenameone/CodenameOne/issues/new
As a workaround you should be able to set this from the code, notice you'll also need to update the value to a date value.
