I will always remember one Christmas a few years ago when we were busy getting this hashbrown breakfast casserole together in the morning. My mother-in-law Kris had it all baked up and ready to go, and it was warming on the bottom rack in the oven.
I made this for breakfast today! It was so delicious! I cooked the hashbrowns and sausage separately and mixed them together with half the cheese. I only used 1 lb. of sausage and it was plenty. I will add 1/2 tsp onion and garlic powders next time. I brought my eggs and milk to room temperature before cooking this dish, it was absolutely perfect at 40 minutes. I wonder if that's why some people have problems with it being runny. Cold ingredients will take longer to cook. This was delicious and I separated some portions to freeze for when baby comes, thanks for a yummy, easy recipe!
Made this for a breakfast meeting at the office!! Turned out FAB. Added sautéed mushrooms green onion red bell pepper, rosemary and a bit of cilantro. Layered..cooked hashbrowns, sausage, veggies, cheese. Poured eggs over dish.. Ended up adding additional 2 eggs. Cooked 370 for 40 min. Amazing!!! Served with sour cream and salsa (if needed). I just made these and used the dehydrated Hungry Jack hashbrowns. They turned out DELISH. Followed the directions on the hasbrowns for their prep then let them cool. I used 6 eggs (0 pts on WW) to stretch the ingredients. Turned out fluffy and delicious. Thanks for the recipe.
I live on a small island in a strange country, and it is not possible to buy hashbrowns here, nor nonstick spray, lol. My question is; When I make the hashbrowns myself, should they be cooked before they go in the iron?
So so so so good! I made these for brunch-for-dinner last night and they were a huge hit. I used chopped fresh herbs that I had on hand.. I also mixed the eggs, hashbrowns and seasonings first, then divided the mixture in half. In one bowl I did chopped ham and cheddar and the other I did crumbled blue cheese and chopped cooked bacon.. I served them with a dollop of Greek yogurt (which we use instead of sour cream) and topped with fried eggs. We ate until we exploded, picked up the pieces of our bodies and had seconds. THANK YOU!!
