If you ask me the beef and pork are a bit on the high side because 400 people cannot consume 100k of beef and pork!!! The labour cost is also a bit high unless they are going to be doing the whole catering i.e. cooking, serving (using their own plates and cutlery) and washing up. I believe it is too late to change this, so I wish you the best.
