Is this just a pizza without the crust? Or are they using a GF crust? I
ordered a crustless pizza at Donatos and it didn't have a dough crust
but they added "sprinkles" on top which were like sesame crackers--they
were good! (unfortunately) but they had flour in them. I couldn't eat
the pizza then.

Donatos used to have what they called a "low Carb" pizza with a rice cracker
crust. We tried it a couple times. Unfortunately is wheat in the rice
cracker. One of the employees was nice enough to show us the ingredient
label. We have however, just had them make a single serving pizza with no
crust at all and it's not too bad.

Concerning the Donatos pizza, you might check out
and

I tried one of these "no dough" pizzas a couple of weeks ago.  LIke the first website says,

Instead of a crust, the toppings are spread over soy-based protein crumbles. The individual-size pizza is served on a paper plate, to be eaten with a knife and fork.

This was 7 inches in diameter (no larger size), served on a plastic plate, and was thin enough that you could (without making too much of a mess) use your fingers to grab off a hunk and eat it that way.  Essentially, there isn't a substantial crust-- nothing around the edges, and just enough on the bottom to hold it together.

If you are like me, and can tolerate a certain amount of gluten, then this makes for a tasty and handy meal or snack on the go.  Then again, if I limit myself to once or twice a month, I can do fine pulling cheese and other toppings off of commercial pizzas despite the substantial amount of gluten that comes attached with it.  If you require a more strict diet (and I bet that you do) then I wouldn't think that this pizza is worth the cross contamination risk, or worries about what's in the toppings.  The Donatos no-dough pizza is pretty much just pizza without the crust, so it is missing something.  For both the money and the taste, I'd rather be at home and microwave up a half a brick of mozzarella cheese on a plate, put some seasonings and toppings on it, and eat it with a fork.  (good luck scrubbing your plate, though!)

Dan--thanks for the chuckle--the brick of cheese on a plate! That's
about what it was--they just skipped the bread crust, put some sauce on
a plate, put cheese over it and I had pepperoni on top. It was about
1/8 inch thick --if that. Basically melted cheese with sauce and costs
about the same. Not very filling! The crumbly things were good--and what
made it--but they were wheat I think. oh well...
