Somebody at work showed me a box of Kroger Instant Oatmeal is labeled as a “Gluten Free Food” and another note of “this food has never contained gluten. I KNOW that most oatmeal is not gluten-free unless it specially grown one like you can get at WildOat/WholeFoods (grown in soil that’s never grown any grains that have gluten). I have not eaten any of this “Gluten Free” Kroger Instant Oatmeal (happens to be BLUEBERRY) to see if my stomach reacts (which it will if I eat gluten). Does any Celiac have experience with eating this product and finding it to be truly Gluten-Free? Doubting that it is “Gluten-Free”, I don’t think Kroger should label it as such.

I think they're finding that the only real problem with oats is the high probability of cross-contamination - unless it is produced in a facility where that risk is removed.

I'm gluten intolerant (although I'm not so sensitive that I have to worry much about cross-contamination).  I know that it is common for Celiacs to report problems with oats, and for some to have no problem.  But I have been eating oatmeal, specifically KROGER instant oatmeal (mostly the strawberries and cream, sometimes the maple and brown sugar kind, for YEARS, as a bit of a diet staple (about twice a week for a quick lunch at work) to substitute for the wheat I was able to eat as recently as six years ago.  I have never had a reaction that I attributed to the Kroger oatmeal.  As usual, let the swallower beware, though.

Bob's Red Mill has Gluten Free Oats, grown in field that have never produced wheat and milled in a gluten free facility. BUT... they are very hard to find.  They sell out almost immediately when stocked.  I bought some at our local health food store.  My husband is very sensitive and had no problem with them.  Perhaps they could be ordered online.

Kroger's is really great about labeling their foods. A real dietician answers the info line when you call to ask about Gluten status, not just someone looking for "gluten" on the list of ingredients.  They make it a point to spell out mystery ingredients like starch (corn, etc.) to avoid labeling errors and comply with federal guidelines for labels.  If you are unsure, call them and ask.  They are so helpful that I buy many Kroger brands just for the complete and accurate labels on them!

I'm in KY and I haven't had trouble finding the Bob's GF oats here. I am curious about the Kroger oats now...I think it warrants a call to them to see. I'm wondering if it's a ppm measurement that allows them to list them as GF.

We have made a crustless Pumpkin Pie for over 40 years for the family. Our daugher was diagnosed when she was 2 1/2 years old. I just follow the recipie on the Libby's pumpkin can and add 2 tsp more pumpkin pie spice to it. We love it and it is Gluten Free. Enjoy!

My understanding is that the Libby’s pumpkin pie mix and Libby’s pumpkin are both gluten free.    Gluten Free Pantry makes a pie crust mix that seems to be pretty good unless someone else has found a better pie crust.

Whole Foods carries a frozen GF pie crust. I haven't tried it myself yet but have heard good reports from others in the NKY group.

I purchased the Domata's flour and it is supposed to be cup per cup for
flour. I made an apple pie using this and the pie crust turned out
fantastic!! I served it for a dinner party and the guest didn't know it was
gluten free and they thought it was fantastic!! I just used the recipe from
the Joy of Cooking and replaced regular All purpose flour with the Domata's
Gluten free flour.

My daughter ate the rest of the pie and keeps asking for another one.

I ordered it online. Go to www.domatalivingflour.com. Their moto is: Domata
is an ancient word meaning appropriately a "Gift of God" Ephesians 2:8. The
significance of Living in our name is that this flour is a Life Giving Food.

I got it in 10 lb bags and bought 5 bags (1 case) to get better pricing. I
just keep it in the freezer. My daughter uses her Betty Crocker cookbook and
makes pound cake with it. She really loves being able to use regular
cookbooks and not having to alter the recipes. Other than the flour. It
makes it really convenient. I also made her a chicken pot pie using the pie
crust and using the flour for the thickener. Again this was delicious! The
only thing that I noticed, if you are a pie crust maker, you know not to
knead the dough to much, is that it is a little harder to roll out. You need
to keep it a little thicker. I use the old egg white trick to brown the top
and it is really great!

Hope this helps! I know how difficult it is to not get the things you really
enjoy. She waited for 2 years for me to learn how to make a perfect pie
crust. Now that I know how to do it, there is no limit to what I can make!

I have to make some cakes to take to family Thanksgiving dinners--carrot cake to be exact--and my husband was commenting that it is a shame I go through all of the trouble and then I can't eat it. Do you ever have to add anything else--like xantham gum--do the desserts get crumbly or fall apart. I may try this flour too.

Does anyone know a place to get it locally (Cincinnati-Mason area) because I have to make in a few days.

Hi Renee,

      I never take anything to a potluck that is gluten. I use my regular carrot cake recipe with gf flour, add xanthum gum and, it’s a winner! Everyone is amazed at how good it is and say they could not tell it was gf.

How much xanthum gum do you add to a cake recipe?  I have never tried to use a regular recipe to bake.  I might experiment this weekend

Hi Bev, sorry it took me so long to get this to you but here is the recipe that I use most often
 
                                                                            Donna Jo's Dream Pastry
 
1/2 cup tapioca flour                                            1/2 cup margarine
1/2 cup cornstarch                                              1/2 cup butter flavor Crisco
1/4 cup potato starch flour                                    1 egg, cold
1 cup sweet rice flour                                           1 Tablespoon vinegar
1 rounded teaspoon xanthan gum                          4 Tablespoons ice water
1/2 teaspoon salt
dash sugar
 
Blend together the flours, xanthan gum, salt and sugar. Cut in the margarine and Crisco in small dabs until you have shortening the size of Lima beans (not cornmeal)
 
Beat the egg using a fork; add the vinegar and ice water. Stir into the flour mixture, forming a ball. You may knead this a bit, since rice flour crust can stand handling. Refrigerate the dough for an hour or more to chill.
 
Divide dough and roll out between two sheets of plastic wrap.  Remove top layer of wrap and invert pastry into a 9" pie pan.  Smooth and shape before removing the second layer of plastic wrap.
 
If baking the crust, first prick the pastry withe a fork on the sides and bottom.  Bake the crust in a preheated 450 degree oven for 10-12 minutes or until slightly browned.  Cool before filling.
 
Makes enough pastry for 2-9" pie shells, plus enough tor one top crust or another very small pastry.
 
If you have pie crust protectors for the edges it is useful when making a pumpkin pie since it bakes for a while, if not just put one layer of tin foil on edges for the first twenty or so minutes this will keep the edges from burning.

If you are using Domata's flour mix you would not add guar or xantham gum. It contains it already.

This is my Grandma's Pumpkin Pie recipe.You can by GF pie crust mix Gluten free pantry or buy a ready made crust
Pumpkin Pie
In large bowl add
2C sugar
2tsp ntmeg
3tsp cinnamon
1/2 tsp salt
1tsp cloves
1tsp allspice
4tbls GF flour (I used Bob's Red Mill GF all purpose flour)
dash of red pepper
stir together
Add
2C pumpkin
4 eggs
2c Milk evaporated/canned
m,ix until well blended
pour into a l;arge pie crust
bake in preheated 450 degree oven for 15 minutes
reduce heat to 350 degrees & bake 45 minutes.

Does anyone have a recipe for Chicken Pot Pie? I would really love to make one but Im not sure where to start.

You can take left over chicken or turkey cut up put aside, cup up one onion and some celery in olive oil till transparent, put chicken stock in pot with potatoes, carrots and bay leafcook til almost tender, add in frozen peas cook till all is tender ( you can add any other veggies if you like, corn, lima's etc) then put in chicken or turkey and thicken stock with GF flour or corn starch and pour into a pie crust (season standard pie crust with garlic powder parsley and pepper) Put on a top crust and prick the top with a fork in a few places and bake 350 for about 35-40 minutes or until crust is golden brown and serve. 
 
You can also make it in a milk gravy if you like, just cook onion and celery in olive oil set aside boil veggies then drain when done fork tender and make milk gravy in your onion and celery pot by putting in GF flour in that pot and browning it slightly with a little butter added to what is in there and then put in milk and cook till thickened then put in pie crust and bake.

I used the Chicken Pot pie recipe from Betty Crockers cookbook and then used Domata's flour. The only thing I would recommend is to put more seasoning in it. Use frozen peas, corn and carrots, or a frozen mix. I use chicken broth, salt, pepper and Domata's floue to thicken. Again, I use more seasonings. the pie crust was great! Use an egg white to dust the top for browning. Hope you like it!

I use Orrington Farms chicken base.  It is a solid, and has to be mixed with water, but it is very flavorful.

I ditto this gluten free base. I use it for Chicken noodle soup, with glutino noodles. Taste great!
