Hi all,

Hoping someone can point the way... first time making a rural method cider. Carried out a number of rackings. Measured the SG today at 1.018 which gives an FSU of 8. The cider is quite lively and not particularly clear... temperature in the shed is 10°c.

I'm not overly fussy on where it finishes... somewhere between 1.004 and 1.010 would be good.

I was initially inclined to let it roll but the fact that it's quite lively and not clear has made me doubt that idea.

Should I rack or leave it?

Look forward to suggestions.

Many thanks, Jon

What do you want to make?
Sparkling or not?
Clear or hazy?
With SG 1.018 and FSU 8, if you rack now, you have good chances it will stabilize and stay at 1.018 (or maybe drop by max 1 or 2 more points) - which is probably a bit too much.

Thanks Claude.

I'd like it to be sparkling but not bothered either way if clear or hazy.

I think you may have answered my question though as 1.018 would be a bit sweeter than I'd like. I guess I'll let it roll and keep an eye on it. It's been quite cold here in Wales and only in the last few days has the garage warmed up a bit so I'm presuming the ferment may kick on a bit in the next few weeks.
