Hello to the group, i have acquired additional scions of the below cultivars. The internet and most other resources are basically vacant of wether these are Early, mid, late, or late-late season harvest apples.

Have any of you have any experience with these apples, or know when they ripen?

Moser Fruit Trees in Michigan describes the Noel Deschamps as an early fall apple.

Nice list - are all of those available in N.America?
There are quite a few French ones there, for which I am currently doing some serach for the French version of my book...

Most of info below is from Boré and Fleckinger, but also other sources.
Avrolles is late flowering, late to very late maturing, bitter
Judor is mostly a juice apple, with medium acidity and low tannin, harvested beginning of November
Bramtot would rather be early to mid for flowering, early to mid season for harvest
Court-pendu rose is a synonym for court-pendu plat. However, another important court-pendu is the C-P gris. Both are considered as "pomme à 2 fins" by the French, meaning they can be used for eating and for juicing/cider. They would have too much acidity to be considered as "Bittersweet" - "Acidulée" would be a better qualifier, Sharp in English. I doubt they contain much tannin.
Doux tardif - I have nothing, but as Andrew said, by the name certainly late harvest and sweet
Fréquin Audièvre, early to mid flowering, early to mid maturity, sweet
Fréquin Lacaille, late flower, early to mid maturing, sweet
Grise Dieppois, early to mid flower, early to mid maturity, sweet and bitter
Haralson is very acidic, certainly not sweet - not suitable for cider in my opinion.
Jouveaux, early to mid flower, mid to late maturity, douce amère (bittersweet)
Kermerrien would be bitter. It is given as mid to late harvest but my own fruit seems to be rather mid-season
Reine de reinettes (King of Pippins) is not a cider apple, but could be used as pomme à deux fins
Peau de vache - there are many of those, one is the old, and there is a new Peau de vache, as well as a Peau de vache musquée...
Redfree is early season for cider - not a cider apple, but I've ued it and it ain't too bad...
Ribston Pippin is mid-season in my orchard, would be high sugar, high acid, low tannin.

So, that's what I see after a quich look!

On availability, yes to 99% on what i have listed for being available in USA for sure. Getting across border to Canada i am not sure about. Most of these i attained from the USDA and Mr Botners 5000 apple tree collection in Oregon. He has an online catalog.

Since the climate here on the Northwest Coast of Washington State is almost identical to that of Normandy France, that is where i started my selections. After they mature, i will will see which cultivars survive and do the best with almost complete neglect. Then top-work the unsuccessful  or high maintenance trees with scions of the winners.

I have to admit I don't understand what the word "tart" means as a descriptor. If I bite an apple and the fruit is tart it is because it isn't ripe enough yet(not sweet enough). If it is with reference to the finished cider wouldn't acidic or sour be a better word? Does tart relate to tannins, or is it the relationship between acidity and sweetness? Tart isn't a word that gets used much in Australia so maybe it is a regional term.

Tart was put in place of either "acidulé" or "aigre" which are the French descriptors for cider apples that have higher acid content. "Sharp" would have been a better English equivalent.
In the US, "tart" is used for apples that have an acidic flavor - would be used for Bramley for example.
