Cider Vinegar

Hi Folks.

I stopped making cider under my Cleeve Orchard brand a few years ago. However I have a lot of perfectly good Cider and Perry Vinegar to sell. However I've been out of the game for so long I've forgotten the rules.....

Does anybody know what legislative steps I'd need to take to start selling it? I have it in IBC's and propose to bottle it and sell direct to end users.
