Sorbitan monostearate emulsifier in Fermentis cider yeast

The product data sheet for the new (or new to me) Fermentis cider yeasts state that the product contains Sorbitan monostearate as an emulsifier.  I had not noticed that other yeast packages contain any kind of additive/emulsifier, although I have seen some sold in small packets that also have some nutrient.  Does anyone know whether Sorbitan monostearate is an additive that would have to be declared on the label of a commercial cider in the EU or UK?  Why is it in there anyway?

I think you will find most modern dried yeasts contain sorbitan monostearate or some other emulsifier of similar structure.  it is a waxy coating that prevents the yeast from drying out fully and also aids in its hydration as a wetting agent. In itself it is effectively water insoluble and adheres to the yeast cells so there is no carry over into the wine or cider. I presume it does not need a label declaration because it is regarded as a processing aid not an additive, just like the yeast itself. It is GRAS in the US and “quantum satis” as E491 in the EU.

Hi Wayne,

I just checked my packs of yeast I have on hand (red star and lalvin) and both have the same emulsifier you have mentioned. I think it's probably in all commercial dried yeast. 

Whether or not its necessary to list as an ingredient I dont know, however I assume this would be in all(or most) commercially produced cider, wine, beer etc. and I've never seen it listed so I think probably it isnt necessary.

Dear Andrew and Graham, thank you very much for your replies.  I had somehow never noticed that this was in commercial dried yeast!  Sounds like it is something I don't need to worry about!  Cheers, Wayne
