Hi all,


With reference to the Malic acid thread I have not seen any reference as to the ratio of Ph and quantity of cider, to the weight or volume of the malic acid, any ideas please?.

Hi John,

1 gram of malic will reduce the pH of 1 liter of cider by approximately 0.08.

Using your calcs if I started at 4.7 and wanted to get to 3.6 in 25 ltrs I would have to add 343 grams of malic acid!. I managed to do that with 100 grams

Please everyone understand that the relation between pH and acid
addition is NOT LINEAR. pH is a LOGARITHMIC QUANTITY.

The extent of pH change also depends on the buffering capacity of your
juice or cider which you do not know. It will differ in every situation.

Logarithmic? So to go from 4-3 you will need to add 10 times the mailic acid than you would to go from 3-2? or the other way around? Now iv'e typed it in its obvious lol
